Extra Brut

The grapes are exclusively from the Valdobbiadene hills and are harvested strictly by hand. The Extra Brut “Zerodue” is a sparkling wine, which undergoes second fermentation in pressure tanks until all the sugar is exhausted. The result is an extremely dry wine with 0.2% residual sugar, hence the name “Zerodue” (zero-two)

RESIDUAL SUGAR: 2 g/l

TOTAL ACIDITY: 6,10 g/l

GRAPE VARIETY: 100% Glera

HARVEST PERIOD: 15 to 30 September

YELD PER HECTARE: 13,500 kg

VINIFICATION: gentle pressing with limited skin contact

PRIMARY FERMENTATION: at controlled temperature with selected yeasts

SECONDARY FERMENTATION: 40 days

COLOR: straw yellow

PERLAGE: fine, persistent

AROMA: intense hints of fresh fruits and toasted almond

FLAVOUR: very dry, savoury, fresh

SERVING TEMPERATURE: 8°C

STORAGE: store in a dry place with constant humidity, away from light
